I know many of you are like me and can’t even think about starting a day without your favorite cup of coffee. And, if you drink it black (i.e. you add nothing to it), you are doing yourself a big favor.

Coffee creamer…a hidden cause of regain
Unfortunately, most coffee creamers are full of junk! The sugar-free versions consist mainly of artificial sweeteners.

And, the rest are typically loaded with Sugar and trans fats. Two ingredients known to destroy your gut health, create inflammation and cause regain after weight loss surgery.
These are just a few of the reasons I highly recommend eliminating all store bought coffee creamers.
A coffee creamer you can’t get enough of
If you are one of those who treats coffee and cream like peanut butter and jelly, then here is a recipe that won’t disappoint.
It is loaded with healthy fats, fiber from the Medjool dates, and tastes great. Plus, you make it once and it will last for a week. Unless, you are one of those who likes a little coffee with your cream. If so, you may need to double the recipe.
*Also, you can tweak it by using almond milk or pure maple syrup if needed. If you recently had weight loss surgery, decaf coffee is recommended due to the risk of ulcers. Check with your bariatric dietitian as to when it is safe to start drinking regular coffee.

Coconut Vanilla Coffee Creamer
8 medjool dates, pitted
1/2 teaspoon vanilla extract
1 can unsweetened full fat coconut milk
Add all the ingredients to a high-speed blender and process until smooth. Pour the creamer through a fine mesh strainer with a cheese cloth covering it to remove any tiny bits. Store in a jar for up to a week.
(I like blending the coffee and creamer together in a high-speed blender to make it more frothy and creamy)
