SWEET AND SPICY MARINADE GOODNESS!

INGREDIENTS
1-1.5 pounds boneless, skinless chicken breasts
3 cloves garlic, minced
1 teaspoon ground cumin
1/2 teaspoon oregano
1/2 cup lime juice
salt and pepper to taste
Salsa:
1 can black beans, rinsed and drained
1 ripe mango, peeled, seeded and diced
1/4 cup chopped red onion
1/4 cup chopped fresh cilantro
salt to taste
3 tablespoons lime juice
1 tablespoons extra-virgin olive oil
DIRECTIONS
Wash and dry the chicken breasts. Combine the ingredients for the marinade in a gallon-sized plastic bag. combine the chicken and marinade in the plastic bag to marinate for 1-12 hours
SALSA
Combine the ingredients for the salsa in a mixing bowl and toss to coat. Add salt, lime juice, and olive oil.
CHICKEN ADOBO
Preheat the grill or broiler to high. Drain the chicken breasts, reserving a little marinade. Transfer the breasts to a cutting board and thinly slice across the grain. Mound the salsa onto plates or a platter. Arrange the chicken slices on and around the salsa and serve.
