WORLD CLASS DRESSING MEETS QUICK AND SIMPLE
This authentic Chicken Caesar salad with it’s made from scratch dressing will win over even the harshest of salad critics. Plus, it only takes 15 minutes to prepare. And the best part is you use raw garlic, a fabulous prebiotic.
Serves 4
INGREDIENTS
1 clove garlic
1 egg yolk
1/2 lemon
1/2 cup extra virgin olive oil
1/4 cup balsamic vinegar
2 Tablespoons Dijon mustard
1 Tablespoon Worcestershire sauce
1 bunch Romaine lettuce
1/2 cup Parmesan cheese, shredded
2 chicken breasts, grilled and chopped
DIRECTIONS
Heat the grill and grill chicken until cooked through. While the chicken is cooking, clean the Romain lettuce, tear into pieces then set in a strainer to drain off excess water. Shred Parmesan cheese into a bowl.
DRESSING
In a bowl (I like to use a wooden bowl, it adds a hint of pizazz!), peel the skin off the clove of garlic and with a fork smash it into the bottom of the bowl (if you enjoy the taste of garlic, leave whole pieces in the bowl. Or, for a lighter taste you can remove remaining garlic chunks). Add egg yolk, squeeze the juice out of half a lemon. Mix with a fork. Add the olive oil, vinegar, Dijon, and Worcestershire sauce and mix with a fork until well blended.
MAKE SALAD
After mixing ingredients thoroughly, add the Romaine, chicken, and cheese to the bowl with the dressing and mix until well coated. Serve
